You’re invited to an unforgettable “Francophile” wine dinner at Varia! Winemaker Matthew Meyer from Williamsburg Winery will co-host a 4-course “Francophile” dinner with Level 2 Sommelier Matthew Emborski featuring handmade pasta and locally farmed produce.
First, enjoy a torchon of foie gras with brioche and black pepper fennel jam, perfectly paired with the Wessex Estate Viognier. Then, savor duck cassoulet with black pudding and celeriac crunch, complemented by the “Trianon” Reserve Cabernet Franc.
For the third course, we’ll serve beef Bourguignon with roasted squash Parisienne gnocchi, accompanied by the “Adagio” Reserve Red Blend. And for dessert, we’ll have Paris Brest with hazelnut and chocolate paired with the Wessex Estate Petite Verdot.
